Summer Macaroni Salad with Tomatoes and Zucchini

Check out this great recipe for Summer Macaroni Salad with Tomatoes and Zucchini! Its creamy, fresh flavors are the perfect addition to any summer BBQ, and it packs a little protein to help keep you feeling full.

  • 16 oz uncooked elbows
  • 4 cups grape tomatoes, cut in half
  • 2 cups (1 small) zucchini, sliced and quartered
  • 1/2 cup red onion, finely chopped
  • 7 tbsp light mayonnaise (Hellman’s)
  • 2 1/2 tbsp red wine vinegar
  • 2 tbsp fat free Greek yogurt
  • 2 tsp Dijon mustard
  • 1/4 tsp oregano
  • 1/4 tsp garlic powder
  • salt and pepper to taste

Cauliflower Rice Balls

a588ca9ec4classiccitytoday_com-skinnydawgReplacing starches with cauliflower is really popular now- you can make mashed potatoes, rice, tater tots, even pizza crust with cauliflower. This recipe uses cauliflower rice mixed with cheese and chicken sausage to make delicious “rice” balls that are low calorie, filling, AND pretty quick to throw together. One tip- don’t worry about making your own cauliflower rice, just pick up a steamer bag from the freezer section!

cauliflower riceIngredients:

  • 1 Italian chicken sausage link, casing removed (2 3/4 oz)
  • 2 1/4 cups riced cauliflower, frozen works great
  • 1/4 teaspoon kosher salt
  • 2 tablespoons homemade marinara (plus optional more for serving)
  • 1/2 cup part skim shredded mozzarella
  • 1 large egg, beaten
  • 1/4 cup bread crumbs* (or gluten-free crumbs)
  • 1 tablespoon grated Pecorino Romano or parmesan*
  • cooking spray

Skinny Vanilla Donut

When you think of Donuts, “healthy” and “low calorie” are not typically words that come to mind. With this week’s Skinny Dawg recipe from  TheSkinnyFork.com, that can all change! These Skinny Vanilla Donuts weight in at about 119 calories a piece and even give you 3.4 grams of protein!

donutDonuts:

  • 1 Cup whole wheat flour
  • 1/8 Cup sugar
  • 1/8 Cup no-calorie sweetener
  • 1 Tsp. baking powder
  • ¼ Tsp. ground cinnamon
  • 1 Large egg
  • ¼ Cup plain fat free Greek yogurt
  • 2 Tbsp. fat free milk
  • 1 ½ Tbsp. light butter, softened
  • 1 Tsp. vanilla bean paste or vanilla extract

Vanilla Glaze:

  • 1/2 Cup powdered sugar
  • 1 Tbsp. fat free milk
  • 1/2 Tsp. vanilla bean paste or vanilla extract

Ravioli and Vegetable Skillet

Meatless Mondays are all the rage now, but so often the meals leave you feeling unsatisfied and reaching for a snack a few hours later. This week’s Skinny Dawg meal has a good bit of fiber and protein that will leave you feeling full after dinner. The diced tomatoes and seasonings give the dish an Italian feel, but the sauce is not heavy and blends well with the vegetable ingredients.

Cook/Prep Time: 30 minutes Servings: 4 (1 and 2/3 cup per serving)

ravIngredients:

  • 1 can (14.5 oz) diced tomatoes (undrained)
  • 1/2 teaspoon Italian seasoning
  • 1/2 cup water
  • 2 medium zucchini and/or yellow summer squashes, halved lengthwise and cut into 1/2-inch-thick slices
  • 1 package (9 oz) refrigerated light four-cheese ravioli
  • 1/8 teaspoon black pepper
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 2 tablespoons finely shredded or grated Parmesan cheese

Instructions: * Combine  tomatoes, Italian seasoning, and water. Bring to boiling.

* Add zucchini/squash, ravioli, and pepper. Return to boiling and then reduce heat. Cover and boil for 6-7 minutes or until ravioli is tender.

* Stir beans into mixture and heat through.

* Sprinkle individual servings with Parmesan cheese

Easy Asian Beef and Noodles

  •  8 oz rib eye steak
  • 2 tsp dark sesame oil, divided
  • 1 cup green onion, sliced (1 inch pieces)
  • 2 cup packaged carrot and cabbage coleslaw
  • 2 (2 7/8 ounce) packages beef-flavor ramen noodles
  • 1 1⁄2 cup water
  • 1 tbsp low-sodium soy sauce

*To cut down on calories, use one package of beef-flavor ramen noodles and use 1 cup of water.

Pasta with Chicken Sausage and Broccoli

It’s a great way to incorporate vegetables into your day while still enjoying a light pasta dish. You can use ground sausage or links, both are extremely flavorful additions to the meal.

  • 14 oz package Italian chicken sausage, casing removed
  • 12 oz uncooked pasta (or brown rice or quinoa pasta for gluten-free)
  • 6 1/2 cups fresh broccoli florets, no stems (16 oz)
  • 5 cloves garlic, smashed and chopped
  • 1/4 cup grated Pecorino Romano or Parmesan cheese
  • 2 tbsp olive oil, divided
  • kosher salt and fresh cracked pepper

Chocolate Peanut Butter Overnight Oats

In the mornings before work, I am all about a breakfast that is fast to put together or better yet, pre-made. I present to you Chocolate Peanut Butter Overnight Oats! Not only do you make them the night before, but you literally throw everything in a jar and stir/shake it up. My husband has been eating this every morning for 2 months- he’s obsessed (and I think you will be too).

Ingredients: 

  • 1/3 cup old fashioned oats
  • 1/2 cup unsweetened chocolate almond milk (I haven’t been able to find unsweetened, so I just use regular chocolate almond milk)
  • 2 tablespoons chocolate peanut butter powder
  • 1/2 banana mashed up
  • 1/2 banana sliced.

Instructions

Mix it all together in a jar/container and refrigerate over night. Enjoy!

Tuna Patties With Cauliflower Garlic Mashed Potatos

Here’s a great weeknight meal that comes together quickly, is protein packed, and it’s super easy on your wallet. The tuna patties are baked in the oven instead of fried, and the cauliflower will have you thinking that you’re actually eating garlic mashed potatoes without the calories or the carbs. Did I mention this is easy on your wallet??

Tuna Patties 

tunaIngredients:

  • 2 6 ounce cans of tuna fish, drained
  • 1/2 cup panko bread crumbs
  • 1/4 cup finely chopped green onions
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons lite sour cream
  • 1 egg

Directions:

  • Preheat oven to 400 degrees F
  • Combine all ingredients and mix well in a bowl.
  • Form 4 patties (they will be wet) and place on a greased baking sheet
  • Bake for 20 minutes

Cauliflower Garlic “Mashed Potatoes”

Ingredients:

  • 1 large head of cauliflower, separated into florets
  • 1 large chicken bouillon cube
  • 1/4 cup skim milk
  • 2 tablespoons I Can’t Believe It’s Not Butter
  • 1 1/2 cloves minced garlic

Directions:

  • Boil the cauliflower and bouillon cube for 20-30 minutes
  • Drain the water and place cauliflower into a blender/food processor with the milk, I Can’t Believe It’s Not Butter, and the garlic. Blend ingredients until smooth.

Chili Mac Casserole

Looking for a little “comfort food” that won’t make you feel uncomfortable? Try this delicious Chili Mac Casserole. Each serving is packed with 17 grams of protein and only 308 calories which will leave you feeling full, not guilty.

chili macIngredients:

  • 1 cup whole grain rotini pasta
  • 1 lb lean ground turkey
  • 1 small onion, diced
  • 1 Tbsp garlic, minced
  • 16 oz can chili beans
  • 14.5 oz can tomatoes, diced
  • 6 oz can tomato paste
  • 4 oz can diced green chilies
  • 1 Tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 Tbsp extra virgin olive oil
  • 1 cup reduced-fat, shredded Mexican cheese blend
  • *½ cup sweet peppers, chopped (optional)

Turkey Meatloaf Muffins

Try this recipe for Turkey Meatloaf Muffins, sent in by Mary Ashley Baker of Athens. Each serving contains two muffins, packs a 15 gram punch of protein, and has only 155 calories.

muffinsIngredients:

  • 1 lb lean ground turkey
  • 1 egg white
  • 1/3 cup quick cooking oats
  • ¼ tsp ground cumin
  • ¼ tsp dried thyme
  • 1 tsp dry yellow mustard
  • 1 tsp black pepper
  • 1 tsp chipotle pepper spice
  • ½ tsp salt
  • 1 tbsp garlic powder (or 1 clove minced)
  • ½ small onion (chopped)
  • ½ zucchini (chopped)

Directions:

  • Preheat oven to 375 degrees.
  • Spray muffin pan with canola or olive oil (or use muffin tins).
  • Mix all ingredients together in one large bowl.
  • Divide spoonfuls of mixture in 12 muffin muffin pan
  • Bake for 20 minutes

Mongolian Beef

Have a craving for a classic Asian dish but don’t  beefwant all of the calories? There is a solution! This recipe for Mongolian Beef hits the spot and is only 415 calories per serving (if served over rice). It’s actually pretty quick to whip up and can be served over rice or noodles. The recipe calls for broccoli but I threw in extra green onions instead.

Ingredients:

  • 1½ pounds flank steak
  • ¼ cup cornstarch
  • ¼ cup reduced-sodium soy sauce
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons sweet chili sauce
  • 6 green onions, thinly sliced
  • 2 tablespoons sesame oil
  • 1 tablespoon minced garlic
  • 1 teaspoon fresh grated ginger
  • ? teaspoon red chili flakes
  • 2 cups broccoli florets, cooked (about 1 small head)
  • Two, 8.8-ounce pouches Uncle Ben’s® Ready Rice® Whole Grain Brown Rice

Garlic Honey Ginger Glazed Salmon

I love salmon so much but I’ve never actually cooked it myself because I thought it would be difficult to cook correctly. Let me tell you- this recipe for Garlic Honey Ginger Glazed Salmon is not only super easy to make but it is probably the best salmon I’ve ever had! I paired it with a White Bean Caprese Salad which can be whipped up with the salmon in a little over 30 minutes for a healthy and flavorful meal! Chicken Tamale Bake

This week’s Skinny Dawg recipe is a favorite in the Taylor household. The Chicken Tamale Bake combines all things that are good in a weekday recipe. It’s quick, extremely easy, inexpensive to make, and has the “comfort food” feel that leaves you in disbelief of the calorie count. I have come up with a few “cheats” when making this meal that shave a few more minutes off of the prep time and a few more pennies off of the cost of the ingredients. For starters, I use canned, shredded chicken. A lot of people might stray away from the canned chicken, but in this meal, it is perfect because it is cost effective, precooked, and two of the larger cans is the perfect amount of chicken. Also, for the enchilada sauce, I prefer the mild green sauce instead of the traditional red sauce. This is a recipe that you can adapt to your taste buds. For those that don’t like spicy meals, leave out the cayenne pepper and chilies. If you want to be sure to get your daily dose of vegetables, add onions, mushrooms, or peppers. You can’t go wrong with this dish! Prep Time: 10 minutes Cook Time: 30 minutes Servings: 8 Ingredients: 1 cup shredded reduced fat Mexican cheese blend, divided 1/3 cup skim milk 1 large egg, lightly beaten 1 t ground cumin 1/8 t ground cayenne pepper 1 (14.75 oz) can of cream-style corn 1 (8.5 oz) box of corn muffin mix 1 (4 oz) can diced green chiles, drained 1 (10 oz) can enchilada sauce 2 cups cooked shredded chicken breast Instructions: * Preheat oven to 400 degrees. Lightly mist a 9 x 13 baking dish with cooking spray and set aside. * In a large bowl, mix together ¼ cup of the Mexican cheese, the milk, egg, cumin, pepper, corn, muffin mix and green chiles in a bowl until combined. Pour the mixture into the prepared baking dish and bake for 15-20 minutes until the layer is set (an inserted toothpick should come out clean). * Using a fork, liberally poke holes all over the surface of the corn cake layer. Pour the enchilada sauce over the top and spread across the surface of the corn cake. Sprinkle the shredded chicken evenly across the top and follow with the remaining ¾ cup shredded cheese. Return the dish to the oven and bake for another 15 minutes. Let cool 5 minutes before cutting into servings. Chicken Mushroom Quesadillas

This week’s Skinny Dawg meal comes from Athens Refrigeration. This Jenn-Air recipe for Chicken & Mushroom Quesadillas is super flavorful and a great week night meal that can be thrown together quickly. Total Time: 30 minutes Servings: 8 Serving Size: 1 Quesadilla Calories Per Serving: 384 Ingredients: Olive oil Cooking Spray 2 ½ Teaspoons chili powder 2 Garlic cloves, minced 1 Teaspoon dried oregano 8 Oz. fresh mushrooms, sliced 1 ½ Cups shredded, cooked chicken 2/3 Cup finely chopped onion 1/3 Cup chopped fresh cilantro 2 ½ Cups grated reduced fat Cheddar Jack cheese 16 8-Inch flour or 5 1/2 –inch corn tortillas Salt and pepper 2 Tablespoons olive oil Directions: Coat large skillet with olive oil cooking spray Add chili powder, garlic, and oregano. Sauté approximately one minute. Add mushrooms and sauté until tender, about 10 minutes. Remove from heat. Mix in chicken, onion, and cilantro. Cool 10 minutes. Mix in cheese. Season with salt and pepper. Lightly brush olive oil on one side of eight tortillas. Place tortillas, oil side down, on large baking sheet. Divide chicken mixture evenly between tortillas and spread to cover. Top with remaining tortillas, press together, and brush top with olive oil. Warm skillet or grill pan on medium high heat. Place tortillas on hot skillet or grill pan and cook until heated through and golden brown, about 3 minutes per side. Cut into wedges and serve. Bubble Up Enchiladas

Everyone loves comfort food, but sometimes a traditional “comfort food” dish is not always the best for your waistline. This week’s Skinny Dawg recipe is low in calories and will satisfy those home cooked cravings. Bubble Up Enchiladas are extremely easy to prepare, and make for a quick weeknight meal. Baked Chicken Parmesan

I absolutely love chicken parmesan, but I don’t love the calories associated with frying the chicken. This version of the classic Italian dish involves baking the chicken which helps to reduce that calorie count. It’s a quick enough dish to serve during the week and can be very kid friendly. I served it with a green veggie medley over a bed of pasta. Beef Fried Rice

This week’s Skinny Dawg recipe for Beef Fried Rice is a take on a classic- fried rice. It’s also a meal that will leave your friends and family in disbelief that it’s low in calories. This meal is quick to get on the table, and as an added bonus, packs a punch of protein to keep you feeling satisfied longer. TOTAL TIME: 30 Min SERVINGS: 6  SERVING SIZE: 1 and 1/3 Cup  CALORIES PER SERVING: 290 Ingredients: 1 cup uncooked regular long-grain white rice 2 cups water 1 teaspoon olive oil 1 egg, beaten 1lb extra-lean (at least 90%) ground beef 1 cup sliced fresh mushrooms 1/2 cup sliced celery 1/3 cup reduced-sodium soy sauce 2 teaspoons sesame oil 1/2 teaspoon red pepper sauce 1 1/2 frozen peas 8 medium green onions, chopped (1/2 cup) Directions: Cook rice in water as directed on package. Meanwhile, brush 12-inch nonstick skillet with olive oil. Heat over medium heat. Add beaten egg to skillet; cook 1 minute or until firm but still moist. Remove from skillet; cut into thin strips. Cover to keep warm. In same skillet, cook beef, mushrooms and celery over medium heat 8 to 10 minutes, stirring frequently, until beef is thoroughly cooked. Salisbury Steak and Mushroom Gravy

This lightened up version of such a classic dish is sure to please even the pickiest of eaters in your household. Pair the Salisbury steak and mushroom gravy with skinny garlic mashed potatoes or rice for the prefect dinnertime meal. Peruvian Beef Stir Fry aka LOMO SALTADO

 

This is a great twist on your typical meat and potato meal. There is so much flavor happening with the peppers, onions, and steak and the potatoes are a great addition. The presentation is also impressive. At only 309 calories per serving (1/2 of the recipe), this meal is waistline friendly and also filling.

Ingredients:

For the Baked Fries:

  • canola cooking spray
  • 1 medium (5.3 oz) potato, russet or yukon gold, washed and dried
  • 1 tsp olive oil
  • 1/4 tsp garlic powder
  • kosher salt and black pepper, to taste

For the Beef:

  • 1/2 lb lean sirloin, cut into small, thin strips
  • kosher salt, to taste
  • 1/4 tsp cumin
  • black pepper, to taste
  • 1 teaspoon olive oil
  • 1 medium red onion, sliced into thick strips
  • 2 mini yellow bell peppers or 1 large
  • 1 large jalapeno, ribbed and seeded, chopped

  • 1 medium tomato, sliced into wedges
  • 1 1/2 tbsp low sodium soy sauce (use tamari for gluten free)
