Garlic Honey Ginger Glazed Salmon

I love salmon so much but I’ve never actually cooked it myself because I thought it would be difficult to cook correctly. Let me tell you- this recipe for Garlic Honey Ginger Glazed Salmon is not only super easy to make but it is probably the best salmon I’ve ever had! I paired it with a White Bean Caprese Salad which can be whipped up with the salmon in a little over 30 minutes for a healthy and flavorful meal! Chicken Tamale Bake

This week’s Skinny Dawg recipe is a favorite in the Taylor household. The Chicken Tamale Bake combines all things that are good in a weekday recipe. It’s quick, extremely easy, inexpensive to make, and has the “comfort food” feel that leaves you in disbelief of the calorie count. I have come up with a few “cheats” when making this meal that shave a few more minutes off of the prep time and a few more pennies off of the cost of the ingredients. For starters, I use canned, shredded chicken. A lot of people might stray away from the canned chicken, but in this meal, it is perfect because it is cost effective, precooked, and two of the larger cans is the perfect amount of chicken. Also, for the enchilada sauce, I prefer the mild green sauce instead of the traditional red sauce. This is a recipe that you can adapt to your taste buds. For those that don’t like spicy meals, leave out the cayenne pepper and chilies. If you want to be sure to get your daily dose of vegetables, add onions, mushrooms, or peppers. You can’t go wrong with this dish! Prep Time: 10 minutes Cook Time: 30 minutes Servings: 8 Ingredients: 1 cup shredded reduced fat Mexican cheese blend, divided 1/3 cup skim milk 1 large egg, lightly beaten 1 t ground cumin 1/8 t ground cayenne pepper 1 (14.75 oz) can of cream-style corn 1 (8.5 oz) box of corn muffin mix 1 (4 oz) can diced green chiles, drained 1 (10 oz) can enchilada sauce 2 cups cooked shredded chicken breast Instructions: * Preheat oven to 400 degrees. Lightly mist a 9 x 13 baking dish with cooking spray and set aside. * In a large bowl, mix together ¼ cup of the Mexican cheese, the milk, egg, cumin, pepper, corn, muffin mix and green chiles in a bowl until combined. Pour the mixture into the prepared baking dish and bake for 15-20 minutes until the layer is set (an inserted toothpick should come out clean). * Using a fork, liberally poke holes all over the surface of the corn cake layer. Pour the enchilada sauce over the top and spread across the surface of the corn cake. Sprinkle the shredded chicken evenly across the top and follow with the remaining ¾ cup shredded cheese. Return the dish to the oven and bake for another 15 minutes. Let cool 5 minutes before cutting into servings. Chicken Mushroom Quesadillas

This week’s Skinny Dawg meal comes from Athens Refrigeration. This Jenn-Air recipe for Chicken & Mushroom Quesadillas is super flavorful and a great week night meal that can be thrown together quickly. Total Time: 30 minutes Servings: 8 Serving Size: 1 Quesadilla Calories Per Serving: 384 Ingredients: Olive oil Cooking Spray 2 ½ Teaspoons chili powder 2 Garlic cloves, minced 1 Teaspoon dried oregano 8 Oz. fresh mushrooms, sliced 1 ½ Cups shredded, cooked chicken 2/3 Cup finely chopped onion 1/3 Cup chopped fresh cilantro 2 ½ Cups grated reduced fat Cheddar Jack cheese 16 8-Inch flour or 5 1/2 –inch corn tortillas Salt and pepper 2 Tablespoons olive oil Directions: Coat large skillet with olive oil cooking spray Add chili powder, garlic, and oregano. Sauté approximately one minute. Add mushrooms and sauté until tender, about 10 minutes. Remove from heat. Mix in chicken, onion, and cilantro. Cool 10 minutes. Mix in cheese. Season with salt and pepper. Lightly brush olive oil on one side of eight tortillas. Place tortillas, oil side down, on large baking sheet. Divide chicken mixture evenly between tortillas and spread to cover. Top with remaining tortillas, press together, and brush top with olive oil. Warm skillet or grill pan on medium high heat. Place tortillas on hot skillet or grill pan and cook until heated through and golden brown, about 3 minutes per side. Cut into wedges and serve. Cajun Chicken Pasta

This week’s recipe for Cajun Chicken Pasta from SkinnyTaste is full of flavor, but not full of calories, which is a win-win in any Skinny Dawg kitchen. You’ll get a ton of protein from the chicken which will keep your hunger at bay. Bubble Up Enchiladas

Everyone loves comfort food, but sometimes a traditional “comfort food” dish is not always the best for your waistline. This week’s Skinny Dawg recipe is low in calories and will satisfy those home cooked cravings. Bubble Up Enchiladas are extremely easy to prepare, and make for a quick weeknight meal. Prep Time: 10 minutes Cook Time: 35 minutes Servings: 6 Ingredients: 1 pound lean ground turkey 1 (10 ounce) can enchilada sauce 1 16 oz can reduced fat refrigerator biscuits 1 ¼ cups shredded low fat Mexican Cheese Instructions: * Preheat oven to 350 degrees * Brown turkey and drain * Mix can of enchilada sauce in with cooked turkey and put into greased casserole dish * Take can of biscuits and divide each one into fourths. Baked Chicken Parmesan

I absolutely love chicken parmesan, but I don’t love the calories associated with frying the chicken. This version of the classic Italian dish involves baking the chicken which helps to reduce that calorie count. It’s a quick enough dish to serve during the week and can be very kid friendly. I served it with a green veggie medley over a bed of pasta. Turkey Burgers with Zucchini

Looking for a way to change up your typical burger for your next grill out? Try this week’s Skinny Dawg recipe for Turkey Burgers with Zucchini. Beef Fried Rice

This week’s Skinny Dawg recipe for Beef Fried Rice is a take on a classic- fried rice. It’s also a meal that will leave your friends and family in disbelief that it’s low in calories. This meal is quick to get on the table, and as an added bonus, packs a punch of protein to keep you feeling satisfied longer. TOTAL TIME: 30 Min SERVINGS: 6  SERVING SIZE: 1 and 1/3 Cup  CALORIES PER SERVING: 290 Ingredients: 1 cup uncooked regular long-grain white rice 2 cups water 1 teaspoon olive oil 1 egg, beaten 1lb extra-lean (at least 90%) ground beef 1 cup sliced fresh mushrooms 1/2 cup sliced celery 1/3 cup reduced-sodium soy sauce 2 teaspoons sesame oil 1/2 teaspoon red pepper sauce 1 1/2 frozen peas 8 medium green onions, chopped (1/2 cup) Directions: Cook rice in water as directed on package. Meanwhile, brush 12-inch nonstick skillet with olive oil. Heat over medium heat. Add beaten egg to skillet; cook 1 minute or until firm but still moist. Remove from skillet; cut into thin strips. Salisbury Steak and Mushroom Gravy

This lightened up version of such a classic dish is sure to please even the pickiest of eaters in your household. Pair the Salisbury steak and mushroom gravy with skinny garlic mashed potatoes or rice for the prefect dinnertime meal. Peruvian Beef Stir Fry aka LOMO SALTADO

 

This is a great twist on your typical meat and potato meal. There is so much flavor happening with the peppers, onions, and steak and the potatoes are a great addition. The presentation is also impressive. At only 309 calories per serving (1/2 of the recipe), this meal is waistline friendly and also filling.

Ingredients:

For the Baked Fries:

  • canola cooking spray
  • 1 medium (5.3 oz) potato, russet or yukon gold, washed and dried
  • 1 tsp olive oil
  • 1/4 tsp garlic powder
  • kosher salt and black pepper, to taste

For the Beef:

  • 1/2 lb lean sirloin, cut into small, thin strips
  • kosher salt, to taste
  • 1/4 tsp cumin
  • black pepper, to taste
  • 1 teaspoon olive oil
  • 1 medium red onion, sliced into thick strips
  • 2 mini yellow bell peppers or 1 large
  • 1 large jalapeno, ribbed and seeded, chopped
  • 2 cloves garlic, crushed
  • 1 medium tomato, sliced into wedges
  • 1 1/2 tbsp low sodium soy sauce (use tamari for gluten free)
  • 1 tbsp apple cider vinegar

Chicken Bacon Ranch Pasta

You can’t go wrong when you combine chicken, bacon, and ranch dressing. You especially can’t go wrong when you combine them into a pasta dish that’s low calorie! This Weight Watchers recipe is easy to throw together and combines these classic comfort food flavors. PREP TIME: 20 Min  TOTAL TIME: 40 Min  SERVINGS: 4  Ingredients: 1/2 lb whole wheat penne pasta 4 slices bacon, diced 1/2 Tbsp light butter 2 large chicken breast, boneless & skinless, cut into bite sized pieces 1 Tbsp all purpose flour 1 pkg ranch dressing mix ( 1/2 oz) 1 cup fat free milk 1/2 cup fat free shredded cheddar cheese salt & pepper to taste 1/4 cup chopped onions Directions:  Cook pasta according to package directions in boiling salted water; drain, return to pot, and keep warm. Meanwhile, cook bacon in a large skillet over medium heat until crisp. Drain on paper towels. Drain all but 1/2 tablespoon of bacon drippings from the pan.  Season the chicken with salt and pepper. Add the butter to the reserved bacon drippings, then add the chicken to the same skillet. Cook until tender, no longer pink, and slightly browned.  Sprinkle the flour and ranch dressing mix over the chicken, stirring to coat evenly. Stir in the milk, and cook, stirring occasionally, until thickened and bubbly. Stir in the cheddar cheese and half of the reserved bacon; cook and stir until the cheese is melted. Taste for seasoning and adjust as needed. Serve each plate of pasta with green onions and more bacon sprinkled over the top. Lasagna is often a favorite in many households, but it often comes with a long cook and prep time, a high amount of calories, and a mess to clean up. Crock-pot Balsamic Pork Roast

Shrimp and Grits

This week’s Skinny Dawg recipe is from SkinnyMom.com and features a southern favorite, Shrimp and Grits. The prep for this meal is ridiculously easy and the outcome is absolutely delicious! The shrimp are full of flavor and are the perfect compliment for the creamy southern grits. KOREAN GRILLED CHICKEN BREASTS

This is a fantastic way to grill chicken. The marinade gives it a TON of flavor and it is really fast to put together. I would recommend marinating the chicken for at least an hour- the longer the better! I served my chicken with fried rice and sauteed asparagus, but it could go with pretty much anything!

Ingredients:

  • 1 pound (2) boneless, skinless chicken breasts, cut in half lengthwise
  • 1/4 cup low sodium or gluten-free soy sauce
  • 1/4 cup unsweetened apple sauce
  • 1/4 cup finely chopped yellow onion
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • 1 tbsp light brown sugar
  • 2 garlic cloves, crushed
  • 1 teaspoon red pepper flakes (optional)
  • 1 teaspoon sesame seeds, plus more for topping
  • 2 thinly sliced scallions, white and green parts

15 MINUTE MEATLOAF DINNER

This week’s Skinny Dawg recipe comes to us from the Eat What You Love Everyday cookbook by Marlene Koch and is so simple and fast that you’ll want to have it every week! Did I mention that it’s also delicious, filling, and has minimal cleanup? If you’re a meat and potato lover, this one is right up your ally, and it only has 315 calories per serving!

Ingredients:

  • 6 oz lean ground beef
  • 6 oz lean ground pork
  • ½ cup finely chopped onion
  • 1/3 cup quick-cooking oats
  • ½ cup shredded carrot
  • 1 large egg
  • 1 large egg white
  • 2 tablespoons tomato paste
  • ½ teaspoon dried thyme, crushed
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic salt, divided
  • 2 medium baking potatoes, about 12 oz each
  • 4 tablespoons barbecue sauce

Directions:

  • In a medium bowl, with a spoon or by hand, combine the first 10 ingredients with ¼ teaspoon of the garlic salt, until just uniformly mixed. Set aside
  • Slice each potato in half lengthwise. Slice a small piece from the bottom of each half so the halves sit flat. Then with a teaspoon or melon baller, scoop out about 3 tablespoons of the raw potato flesh (to make a boat-like cavity). Sprinkle the potatoes lightly with remaining ¼ teaspoon of garlic salt.
  • Evenly spoon the meat into potatoes, pressing it lightly into the space and creating a smooth mound. Brush or spread 1 tablespoon of barbecue sauce on top to cover all of the meat. Place the potatoes on a large, microwave-safe plate, and cook on high for 10 minutes, or until a thermometer registers 155 degrees.

ZUCCHINI RANCH PASTA

What better way to enjoy zucchini and squash than with a zesty Zucchini Ranch Pasta? It’s a great vegetarian dish that can be enjoyed on your “Meatless Monday,” or you can throw in some grilled chicken to add a protein punch.

Ingredients:

  • 8 ounces whole wheat linguine
  • ½ cup nonfat plain Greek yogurt
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 3 medium zucchini, sliced into thin rounds
  • 2 garlic cloves, minced
  • 1 packet of Hidden Valley buttermilk ranch dressing powdered mix

Directions:

  • Cook pasta according to package directions, drain and set aside
  • In a large bowl, stir together yogurt, Parmesan cheese, and ranch packet
  • In a large skillet, heat olive oil over medium heat and add zucchini and minced garlic. Cook until zucchini is soft.
  • Combine the pasta, zucchini and ranch mixture. Stir to coat pasta and zucchini with ranch mixture.
  • Divide into 4 bowls for serving, sprinkling each with a pinch of Parmesan cheese.

TURKEY TACO LETTUCE WRAPS

Does your family have a weekly taco night? “Healthify” Taco Tuesday a bit with these Turkey Taco Lettuce Wraps. Not only is this a low calorie meal at only 255 calories per two tacos, you’re also cutting a significant amount of carbs by using lettuce instead of tortillas.

Ingredients

  • 1 pound lean ground turkey
  • 1 tsb garlic powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp chili powder
  • 1 tsp paprika
  • ½ tsp oregano
  • ½ small onion, minced
  • ¾ cup water
  • 4 oz can tomato sauce
  • 8 large lettuce leaves from Iceberg lettuce

RAVIOLI SKILLET

Believe it or not, this stuffed pasta is low in calories and high in fiber and protein. The generous serving size will leave you feeling satisfied, and the one pot meal makes for easy clean up.

Ingredients:

  • 1 can (14.5 oz) diced tomatoes
  • ½ teaspoon Italian seasoning
  • ½ cup water
  • 2 medium zucchini and/or yellow summer squashes, halved length wise and cut into ½ inch-thick slices
  • 1 package (9 oz) refrigerated light four-cheese ravioli
  • 1/8 teaspoon black pepper
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 2 tablespoons chopped fresh basil or parsley
  • 2 tablespoons finely shredded or grated Parmesan cheese

Directions:

  • In a very large skillet, combine undrained tomatoes, Italian seasoning, and the water; bring to boiling.
  • Add zucchini and/or yellow summer squash, ravioli, and pepper. Return to boiling; reduce heat. Cover and boil gently for 6 to 7 minutes or until ravioli is tender, stirring gently once or twice.
  • Stir beans into ravioli mixture; heat through.
  • Sprinkle servings with basil and Parmesan cheese
