Turkey Burgers with Zucchini

Looking for a way to change up your typical burger for your next grill out? Try this week’s Skinny Dawg recipe for Turkey Burgers with Zucchini. Adding zucchini to the patties makes them extremely juicy and helps to cut down the calories. Serve them as a typical burger with a bun or eat them plain- either way they’re so flavorful! Beef Fried Rice

This week’s Skinny Dawg recipe for Beef Fried Rice is a take on a classic- fried rice. It’s also a meal that will leave your friends and family in disbelief that it’s low in calories. This meal is quick to get on the table, and as an added bonus, packs a punch of protein to keep you feeling satisfied longer. TOTAL TIME: 30 Min SERVINGS: 6  SERVING SIZE: 1 and 1/3 Cup  CALORIES PER SERVING: 290 Ingredients: 1 cup uncooked regular long-grain white rice 2 cups water 1 teaspoon olive oil 1 egg, beaten 1lb extra-lean (at least 90%) ground beef 1 cup sliced fresh mushrooms 1/2 cup sliced celery 1/3 cup reduced-sodium soy sauce 2 teaspoons sesame oil 1/2 teaspoon red pepper sauce 1 1/2 frozen peas 8 medium green onions, chopped (1/2 cup) Directions: Cook rice in water as directed on package. Meanwhile, brush 12-inch nonstick skillet with olive oil. Heat over medium heat. Add beaten egg to skillet; cook 1 minute or until firm but still moist. Remove from skillet; cut into thin strips. Cover to keep warm. In same skillet, cook beef, mushrooms and celery over medium heat 8 to 10 minutes, stirring frequently, until beef is thoroughly cooked. In small bowl, mix soy sauce, sesame oil and pepper sauce; stir into beef mixture. Add peas, cooked egg and cooked rice; cook 2 to 3 minutes longer, stirring constantly, until hot. Salisbury Steak and Mushroom Gravy

This lightened up version of such a classic dish is sure to please even the pickiest of eaters in your household. Pair the Salisbury steak and mushroom gravy with skinny garlic mashed potatoes or rice for the prefect dinnertime meal. Ingredients: 1 1/2 tsp oil 3/4 cup onions, minced 1 lbs 93% lean ground beef 1 lb 93% lean ground turkey 1/2 cup dry breadcrumbs 1 large egg 1 large egg white 2 cups beef broth 1/4 tsp salt 1/8 tsp ground black pepper, to taste 8 oz sliced mushrooms 2 tbsp all-purpose flour 2 tbsp tomato paste 1 tsp red wine vinegar 2 tsp Worcestershire sauce, to taste 1/2 tsp mustard powder 1/4 cup water Chopped parsley for garnish (optional) Click here for instructions. Peruvian Beef Stir Fry aka LOMO SALTADO

 

This is a great twist on your typical meat and potato meal. There is so much flavor happening with the peppers, onions, and steak and the potatoes are a great addition. The presentation is also impressive. At only 309 calories per serving (1/2 of the recipe), this meal is waistline friendly and also filling.

Ingredients:

For the Baked Fries:

  • canola cooking spray
  • 1 medium (5.3 oz) potato, russet or yukon gold, washed and dried
  • 1 tsp olive oil
  • 1/4 tsp garlic powder
  • kosher salt and black pepper, to taste

For the Beef:

  • 1/2 lb lean sirloin, cut into small, thin strips
  • kosher salt, to taste
  • 1/4 tsp cumin
  • black pepper, to taste
  • 1 teaspoon olive oil
  • 1 medium red onion, sliced into thick strips
  • 2 mini yellow bell peppers or 1 large
  • 1 large jalapeno, ribbed and seeded, chopped
  • 2 cloves garlic, crushed
  • 1 medium tomato, sliced into wedges
  • 1 1/2 tbsp low sodium soy sauce (use tamari for gluten free)
  • 1 tbsp apple cider vinegar

Chicken Bacon Ranch Pasta

You can’t go wrong when you combine chicken, bacon, and ranch dressing. You especially can’t go wrong when you combine them into a pasta dish that’s low calorie! This Weight Watchers recipe is easy to throw together and combines these classic comfort food flavors. PREP TIME: 20 Min  TOTAL TIME: 40 Min  SERVINGS: 4  Ingredients: 1/2 lb whole wheat penne pasta 4 slices bacon, diced 1/2 Tbsp light butter 2 large chicken breast, boneless & skinless, cut into bite sized pieces 1 Tbsp all purpose flour 1 pkg ranch dressing mix ( 1/2 oz) 1 cup fat free milk 1/2 cup fat free shredded cheddar cheese salt & pepper to taste 1/4 cup chopped onions Directions:  Cook pasta according to package directions in boiling salted water; drain, return to pot, and keep warm. Meanwhile, cook bacon in a large skillet over medium heat until crisp. Drain on paper towels. Drain all but 1/2 tablespoon of bacon drippings from the pan.  Season the chicken with salt and pepper. Add the butter to the reserved bacon drippings, then add the chicken to the same skillet. Cook until tender, no longer pink, and slightly browned.  Sprinkle the flour and ranch dressing mix over the chicken, stirring to coat evenly. Stir in the milk, and cook, stirring occasionally, until thickened and bubbly. Stir in the cheddar cheese and half of the reserved bacon; cook and stir until the cheese is melted. Taste for seasoning and adjust as needed. Serve each plate of pasta with green onions and more bacon sprinkled over the top. KOREAN GRILLED CHICKEN BREASTS

This is a fantastic way to grill chicken. The marinade gives it a TON of flavor and it is really fast to put together. I would recommend marinating the chicken for at least an hour- the longer the better! I served my chicken with fried rice and sauteed asparagus, but it could go with pretty much anything!

Ingredients:

  • 1 pound (2) boneless, skinless chicken breasts, cut in half lengthwise
  • 1/4 cup low sodium or gluten-free soy sauce
  • 1/4 cup unsweetened apple sauce
  • 1/4 cup finely chopped yellow onion
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • 1 tbsp light brown sugar
  • 2 garlic cloves, crushed
  • 1 teaspoon red pepper flakes (optional)
  • 1 teaspoon sesame seeds, plus more for topping
  • 2 thinly sliced scallions, white and green parts

15 MINUTE MEATLOAF DINNER

This week’s Skinny Dawg recipe comes to us from the Eat What You Love Everyday cookbook by Marlene Koch and is so simple and fast that you’ll want to have it every week! Did I mention that it’s also delicious, filling, and has minimal cleanup? If you’re a meat and potato lover, this one is right up your ally, and it only has 315 calories per serving!

Ingredients:

  • 6 oz lean ground beef
  • 6 oz lean ground pork
  • ½ cup finely chopped onion
  • 1/3 cup quick-cooking oats
  • ½ cup shredded carrot
  • 1 large egg
  • 1 large egg white
  • 2 tablespoons tomato paste
  • ½ teaspoon dried thyme, crushed
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic salt, divided
  • 2 medium baking potatoes, about 12 oz each
  • 4 tablespoons barbecue sauce

Directions:

  • In a medium bowl, with a spoon or by hand, combine the first 10 ingredients with ¼ teaspoon of the garlic salt, until just uniformly mixed. Set aside
  • Slice each potato in half lengthwise. Slice a small piece from the bottom of each half so the halves sit flat. Then with a teaspoon or melon baller, scoop out about 3 tablespoons of the raw potato flesh (to make a boat-like cavity). Sprinkle the potatoes lightly with remaining ¼ teaspoon of garlic salt.
  • Evenly spoon the meat into potatoes, pressing it lightly into the space and creating a smooth mound. Brush or spread 1 tablespoon of barbecue sauce on top to cover all of the meat. Place the potatoes on a large, microwave-safe plate, and cook on high for 10 minutes, or until a thermometer registers 155 degrees.

ZUCCHINI RANCH PASTA

What better way to enjoy zucchini and squash than with a zesty Zucchini Ranch Pasta? It’s a great vegetarian dish that can be enjoyed on your “Meatless Monday,” or you can throw in some grilled chicken to add a protein punch.

Ingredients:

  • 8 ounces whole wheat linguine
  • ½ cup nonfat plain Greek yogurt
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 3 medium zucchini, sliced into thin rounds
  • 2 garlic cloves, minced
  • 1 packet of Hidden Valley buttermilk ranch dressing powdered mix

Directions:

  • Cook pasta according to package directions, drain and set aside
  • In a large bowl, stir together yogurt, Parmesan cheese, and ranch packet
  • In a large skillet, heat olive oil over medium heat and add zucchini and minced garlic. Cook until zucchini is soft.
  • Combine the pasta, zucchini and ranch mixture. Stir to coat pasta and zucchini with ranch mixture.
  • Divide into 4 bowls for serving, sprinkling each with a pinch of Parmesan cheese.

TURKEY TACO LETTUCE WRAPS

Does your family have a weekly taco night? “Healthify” Taco Tuesday a bit with these Turkey Taco Lettuce Wraps. Not only is this a low calorie meal at only 255 calories per two tacos, you’re also cutting a significant amount of carbs by using lettuce instead of tortillas.

Ingredients

  • 1 pound lean ground turkey
  • 1 tsb garlic powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp chili powder
  • 1 tsp paprika
  • ½ tsp oregano
  • ½ small onion, minced
  • ¾ cup water
  • 4 oz can tomato sauce
  • 8 large lettuce leaves from Iceberg lettuce

RAVIOLI SKILLET

Believe it or not, this stuffed pasta is low in calories and high in fiber and protein. The generous serving size will leave you feeling satisfied, and the one pot meal makes for easy clean up.

Ingredients:

  • 1 can (14.5 oz) diced tomatoes
  • ½ teaspoon Italian seasoning
  • ½ cup water
  • 2 medium zucchini and/or yellow summer squashes, halved length wise and cut into ½ inch-thick slices
  • 1 package (9 oz) refrigerated light four-cheese ravioli
  • 1/8 teaspoon black pepper
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 2 tablespoons chopped fresh basil or parsley
  • 2 tablespoons finely shredded or grated Parmesan cheese

Directions:

  • In a very large skillet, combine undrained tomatoes, Italian seasoning, and the water; bring to boiling.
  • Add zucchini and/or yellow summer squash, ravioli, and pepper. Return to boiling; reduce heat. Cover and boil gently for 6 to 7 minutes or until ravioli is tender, stirring gently once or twice.
  • Stir beans into ravioli mixture; heat through.
  • Sprinkle servings with basil and Parmesan cheese

CROCKPOT HONEY GARLIC CHICKEN

You’ve got to love a slow cooker meal that is ridiculously easy AND healthy, right? With this Crockpot Honey Garlic Chicken, you literally throw all of the ingredients into the slow cooker and in 4 hours, you have a delicious, restaurant quality meal.

Ingredients:

  • 1 lb boneless, skinless chicken breast, cut into chunks
  • ¼ cup honey
  • 1/3 cup ketchup
  • 1/3 cup soy sauce
  • 3 garlic cloves, minced
  • 2 ½ tablespoons Sriracha
  • 1 tablespoon Italian seasoning
  • ¼ cup chopped green onions

Directions:

  • Stir together garlic, soy sauce, ketchup, honey, Italian seasoning, and Sriracha
  • Add chicken to crockpot and pour sauce over, mixing ingredients
  • Cook on low for 4 hours
  • Serve over rice or lo-mein noodles
  • Once plated, sprinkle with green onions

CHEESY JALAPENO POPPER BAKED STUFFED CHICKEN

Looking to spice up your weekly menu? This recipe for Cheesy Jalapeno Popper Baked Stuffed Chicken from SkinnyTaste.com will definitely put a little kick in your typical weeknight dinner, but won’t break your calorie budget. Stuffed with cream cheese, cheddar cheese, bacon, and jalapenos, the chicken is breaded and then baked in the oven.

  • salt and fresh pepper

MEATLOAF WITH CAULIFLOWER “MASHED POTATOES”

If you love home cooked meatloaf and mashed potatoes, but stay away from cooking it because it’s loaded with carbs and calories, this week’s Skinny Dawg meal is for you. By using ground turkey instead of ground beef, you’re reducing calories and fat, and it still tastes great. Also, this meatloaf is extremely quick to prepare and is great the next day as left overs.

What goes better with meatloaf than mashed potatoes? Unfortunately, regular mashed potatoes are loaded with carbs and calories. By substituting cauliflower for the potatoes, you significantly cut the carbs and calories and get the added fiber. The cauliflower will take on the flavor of the ingredients that you mix with them, so you’ll feel like you’re eating garlic mashed potatoes with none of the guilt!

Meatloaf:

Cook Time: 55 minutes  Servings: 8  Calories: 264    Carbs: 16g      Fat:  9g     Protein: 28.5g

Ingredients:

  •  2lbs Ground Turkey
  • 1-pkg Stove Top Stuffing Mix
  • 1 Large Egg
  • 1/2c. Water
  • 1/4c. Ketchup

Cauliflower “Mashed Potatoes” 

 Cook Time: 45 minutes  Servings: 4  Calories: 61    Carbs: 9g      Fat:  2g     Protein: 4g

Ingredients:

  • 1 head of cauliflower
  • 1/3 cup skim milk
  • 1 tablespoon I can’t believe it’s not butter
  • 2 cloves minced garlic
  • 5-6 mini chicken bouillon cubes
  • Parmesan cheese (optional)

Instructions:

  1. Cut stems and leaves off of cauliflower and chop into florets
  2. Bring pot of water to a boil, placing bouillon cubes into water
  3. Boil cauliflower for 35-40 minutes, until very soft
  4. Place cauliflower and milk, butter, and garlic into blender and puree
  5. Serve “mashed potatoes” in bowls, sprinkling them with Parmesan cheese (optional)

LOBSTER MAC AND CHEESE

Cheese, lobster, pasta- is your mouth watering yet? Would you believe it’s a skinny meal too? This is an excellent meal to make for company, as it’s sure to be a crowd pleaser, but it’s also great for a typical weeknight at home.

Ingredients:

  • 2 cups whole wheat pasta shells
  • 1½ Tbsp light butter
  • 2 Tbsp wheat flour
  • 15 oz can diced fire-roasted tomatoes
  • 1½ cups reduced-fat, shredded cheddar cheese
  • ½ cup reduced-fat Parmesan cheese
  • ½ tsp mustard powder
  • ¼ tsp cayenne pepper
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ cup skim milk
  • ¾ lb lobster meat, cut into chunks (fresh cooked lobster meat or you can use imitation lobster)

ONE PAN BALSAMIC CHICKEN & VEGGIES

I love a meal that’s easy clean-up, which means if I can prepare the whole thing in the same pan, I’m an instant fan. This week’s recipe for One Pan Balsamic Chicken & Veggies definitely does not disappoint. The chicken is extremely tender and flavorful, and pairs so well with the asparagus and tomatoes (I’m not a huge fan of carrots so I left those out of my version). The Italian dressing and honey give the meal a great sweet and tangy flavor, and it can be on your table in 25 minutes!

Ingredients:

  • 1/4 cup + 2 Tbsp Italian salad dressing
  • 3 Tbsp balsamic vinegar
  • 1 1/2 Tbsp honey
  • 1/8 tsp crushed red pepper flakes (more or less to taste)
  • 1 1/4 lbs chicken breast tenderloins
  • 2 Tbsp olive oil
  • Salt and freshly ground black pepper
  • 1 lb fresh asparagus, trimmed of tough ends, chopped into 2-inch pieces
  • 1 1/2 cups matchstick carrots
  • 1 cup grape tomatoes, halved

SHRIMP STACK

This week’s Skinny Dawg recipe was really fun to make. It looks like it’d be so difficult to put together, but it was really quick and easy. If you like sushi, you’ll love this. If you’re not a fan of raw fish but want to dip your toe in the sushi pool, you should definitely try this one! You get the flavors of a typical sushi roll without the raw fish.

Ingredients: 

  • 1 1/3 cups cooked short-grain brown rice (from 1/2 cup uncooked)
  • 2 tablespoons rice vinegar
  • 8 ounces cooked shrimp, peeled and tails removed
  • 1 cup diced cucumber (about 1 small)
  • 1 teaspoon chopped fresh chives
  • 1/2 cup mashed avocado (about 1 medium)
  • 4 teaspoons Furikake (such as Eden Shake or use sesame seeds)
  • 4 teaspoons reduced-sodium soy sauce (or gluten-free)
  • 4 teaspoons mayonnaise
  • 1 teaspoon sriracha sauce

BLUEBERRY BANANA BREAD

If you’re looking for something that’ll satisfy your sweet tooth without breaking your calorie bank, this Blueberry Banana Bread is a great choice. It’s delicious as a snack or for breakfast, and it’s a great way to use those super ripe bananas that are hanging out in your fruit bowl.

Ingredients:

  • 1 cup blueberries
  • 3 ripe medium bananas, mashed
  • 2 tbsp unsweetened apple sauce
  • 1 1/4 cups white whole wheat flour

  • 2 tbsp butter, softened
  • 1/2 cup (4 oz) light brown sugar, packed
  • 2 large egg whites
  • 1 tsp vanilla extract

AVOCADO TACOS

I have developed a love for avocado over the years and after trying this recipe for Avocado Tacos, I have become a huge fan! These tacos are a great way to cut back on carbs and they’re super filling.

Ingredients:

  • 3 medium ripe avocados
  • Juice of 2 fresh limes
  • 1 lb. ground meat of choice
  • 1/2 of a yellow onion, diced
  • Fresh taco toppings of choice (diced tomatoes, fresh pico, cilantro, olives, a touch of natural cheese, etc..

Homemade taco seasoning:

  • 1/2 Tbsp chili powder
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • 1/8 tsp crushed red pepper flakes
  • 1/8 tsp dried oregano
  • 1/4 tsp paprika
  • 1 tsp cumin powder
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
